Omelettes and Biscuits

Today, we decided to both revisit a past post and try a new recipe. We made omelettes and biscuits, in another exciting 'breakfast for dinner' meal.

The biscuits were pretty simple. We used this recipe, since we didn't have shortening on hand, and halved it and came out with five small biscuits. They were pretty crumbly- next time, I'd use slightly more milk. Here's a picture of them once they came out of the oven:



For the omelettes, we used 3 eggs, tomatoes, yellow peppers, and our favorite "Mexican-Style Cheese"! Doesn't get more authentic than that.



 The end result was a lot prettier than the first time, because we used a non-stick pan. The omelette was small but thick, and with the biscuits, it was enough for two people.



Here it is, all plated up with the biscuits!


We finished off the meal with some chocolate chip cookies made by the generous Mama Canz. Thanks Mom!!

Challah! French Toast

Today, we decided to return to one of our favorite kinds of meals: breakfast for dinner! Kim's mother was nice enough to give us a french toast recipe and several crucial ingredients.

We used challah bread, and made the liquid coating with two eggs, 1/2 cup of milk, vanilla, sugar,  and pumpkin spices. You could also just use cinnamon.

Each piece ended up being a beautiful golden brown after a few minutes on the grill. The whole process was pretty easy and fast. 


Overall, the meal was delicious! We were very happy with how everything turned out.
